Simple Southwest Grilled Chicken Salad

Ingredients

  • 1 head Lettuce or Mixed greens, chopped
  • 1 tablespoon olive oil
  • 2 limes, juiced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 Grilled Chicken Breasts, cubed
  • 1 cup cooked Brown Rice
  • 1 cup grilled Corn
  • 1 cup Pico de Gallo
  • 1 Avocado
  • 1/4 cup cilantro

Directions

  1. Toss greens in olive oil, lemon, salt, and pepper.
  2. Add chicken, brown rice, corn, and pico.
  3. Slice avocado and add immediately before serving.
  4. Garnish with cilantro
