Chicken Fried Rice

Ingredients

  • 2 tablespoon coconut oil
  • 1 cup minced onion
  • 1 tablespoon minced garlic
  •  2 Chicken Breasts, cubed
  • 1 head of broccoli, minced
  • 2 cups brown rice, cooked
  • 2 teaspoon minced ginger
  • 2 tablespoon soy sauce
  • 1 teaspoon salt
  • ¼ cup green onions

Directions

  1. Add coconut oil to large skillet or wok over medium-high Heat.
  2. Sweat onions and garlic for five minutes.
  3. Add chicken, broccoli, cooked brown rice, and soy sauce.
  4. Mix and cook for additional seven minutes.
  5. Add green onions before serving.
